Sharp Cheddar Grits Casserole

Ingredients:

4 cups water
1 teaspoon salt
1 cup quick-cooking grits
4 ounces Cabot Cheddar, grated (about 1 cup)
4 tablespoons Cabot Salted Butter
2 large eggs, lightly beaten

Directions:

Preheat oven to 350 degrees.

In large saucepan, bring water and salt to boil. Gradually stir in grits. Simmer uncovered, stirring occasionally, for 5 minutes.

Remove from heat and stir in remaining ingredients. Pour into ungreased 1 1/2-quart casserole.

Bake for 45 to 55 minutes.

(Grits can be prepared in advance through step 3; cover and refrigerate until ready to bake.)
